This project funded Mr. Justin Johnston, a graduate student in Meat Science from The University of Minnesota and studying a PhD in Meat Science, to share experience and knowledge with the Australian Pig Industry. Mr Johnston spent 11 weeks contributing to research into meat quality and product development across the country. The project enabled a stronger relationship between the University of Minnesota Meat Science group and the Australian pork industry to be developed as well as a greater knowledge of US style pork products and cutting lines.
